Sucrose octaacetate fully acetylates all eight hydroxyls of sucrose for bittering agent and polymer crosslinker applications. Despite sucrose base, chemically pure ester form classifies HTS 2940.00.60.00 as sugar ester. Denatures alcohol and prevents sucrose crystallization in confections.
